Strawberry Banana Cake Trifle

If you are in need of an easy dessert that will BLOW YOUR MIND, look no further. A strawberry banana cake trifle sounds insanely simple and that’s because it is but each bite will leave you wanting more and more. This dessert is a classic and it’s for a reason, everyone loves it.

This dessert is definitely in the top ten of most classic desserts to make. For me, it has such a nostalgic feeling paired with it because I can't think of one family party that was not the star of the show. Now, it's a little different, because my cakes are a contender for that same title and we all know how amazing those are if I do say so myself. 

Ingredients You Will Need:

The trifle is pretty self-explanatory, it is layers of cake, pudding, and fresh fruit. To make life simple, use our cake mix for the vanilla cake. Not only is it easy to make but it tastes delicious! As always, whatever cake you like best can replace what we suggest. I have even thought about using a different flavor other than vanilla but I am not so sure how that would taste. Would strawberry cake be too weird? Or chocolate? I’ll have to test that out in the kitchen. The fruit I use is just sliced strawberries and bananas. These too can also be swapped out for any fruit. Honestly, this trifle is so easy to customize because so many things will taste good with cake and pudding. I’m not sure what wouldn’t be good with this.

What truly makes people go bananas over this dessert (see what I did there *wink*) is the pudding. I have found the best way to make this dessert is to use homemade pudding and elevate it by folding in whip cream to it. All you need for that is heavy cream, egg yolks, half and half, sugar, cornstarch, salt, and vanilla. This creates the fluffiest, lightest, creamiest pudding that you will ever taste. It is so delicious and trusts me on this one because even the pickiest eater verified it for me. My sister is a pudding hater which doesn't even make sense because pudding is amazing but she is one. Yet, she eats this dessert up! Oh and almost forgot to mention she hates BANANAS! So yeah, when I say everyone loves this dessert, I mean it.

Baking The Cake:

Since our vanilla cake mix takes care of the dry ingredients for you, all you will need is butter, vegetable oil, eggs, buttermilk, and vanilla extract. Preparing the cake batter is very simple. To a bowl add your eggs, vanilla, and buttermilk. Once that is well combined, in another bowl pour out the cake mix. If you are in need or looking for some new bowls to add to your kitchen I really like these clear, glass bowls. They come in a set of 10 which is perfect so you have a variety of sizes and are completely safe to use in the microwave.To that you are going to want to add and mix in the butter. Be sure that the butter you are using is softened so that it will easily combine. This should create small, crumbly clumps and that is how you know you can add in the wet mixture. Add in half at first, mix, then add in more. The batter does not have to be completely smooth! It is better if there are clumps and it is thick as that means you have not over-mixed it yet. The batter should be light in color and have a fluffy texture.

Bake the cakes for about 25-30 minutes at 350 degrees Fahrenheit.

The Pudding:

As I said above, the pudding is really what makes this dessert. To make it, you are going to add your ingredients into a pot; cornstarch, sugar, and salt. In a separate bowl combine the egg yolks and half and half. Once well combined, pour a little bit of the egg mixture into the pot and whisk. A smooth paste should be formed, you do not want any lumps. Then add the remaining egg mixture and whisk so that it can then be cooked over medium heat. After the pudding has boiled and cooled, whip up some heavy cream until stiff peaks have formed. Fold the whipped cream into the pudding. Be sure to save some whipped cream so that you can garnish off your trifle.

Build The Trifle:

Now that all the components have been prepared, it is time to assemble. The first thing you need is something to hold it all. I decided to make one big one, so I used a big trifle dish. Looking back, I would have gotten this trifle dish because it definitely is a little fancier and taller. I love the height it provides and it would look great for show at parties or dinner events. If I were making this trifle for a party or clients as I have in the past, I get individual-sized ones. They are super cute and hold the perfect amount. If you're looking for something that you’ll already have at home, you can use any glass from a wine glass to a champagne glass. Anything can work.

Crumble up your baked cakes and start layering the bottom of your dish with the cake. Then add your pudding, strawberries, and bananas, and repeat. Once all your cake and pudding are gone, top it off with the remaining whipped cream and fresh fruit. Voila! Your delicious trifle is done!

Strawberry Banana Cake Trifle

What you will need:

  • Heavy Cream

  • 3 egg yolks

  • 3 cups half and half (or milk) 

  • ½ cup sugar

  • ⅓ cup of cornstarch

  • ¼ tsp salt

  • 1 ½  tsp vanilla


Vanilla Pudding:

  1. In a pot combine together the cornstarch, sugar, and salt.

  2. In a bowl combine together the egg yolks and half and half. Whisk until smooth. 

  3. Add a small amount of the egg mixture to the cornstarch. Whisk until smooth. It should create a paste, and ensure there are no lumps. Add in the remaining egg mixture and whisk until smooth. 

  4. Cook the pudding mixture over medium heat until thickened and boiling. Consistently stir to avoid burning as pudding burns very quickly! Once it comes to a boil, let boil for about 30 minutes and remove it from the heat.

  5. Add in the vanilla extract and strain (optional but suggested to avoid lumps) 

  6. Cool completely!!!!!!! This can not be warm to move on to assembly. 

Assemble:

  1. Whisk the Heavy Cream until still peaks and whipped cream is formed.

  2. Gently fold in the heavy cream with the pudding. This creates a lighter mixture that is delicious.

  3. Grab your cooled, baked cakes and crumble them. 

  4. Grab your trifle and layer as follows: cake, pudding, and fresh fruit. Repeat this process until all of your pudding and cake is gone! Garnish with fruit and enjoy!

  5. Keep refrigerated!!!
